Vegan Blackberry and Lemon Tea Cake

We love springtime for its juicy forest berries and bright zingy citrus, and we feel this cake combines those flavours impeccably. At the base sits a softly baked blackberry, surrounded by a moist tea cake. Lemon icing drizzled over the top and finished with candied lemon peel and blackberry powder. Its a shame to eat something so pretty, but you wont be dwelling on that thought for long. A delicious spring morning incarnate.
